Growing hemp for seed has been an established industry in western Canada for more than a decade. I have grown it. Easy to grow but a challenge to combine and deal with the straw after. Burning is the most common method. Had to have the crop inspected to make sure there was no MJ in it. There is a niche market for the seed that can be over supplied easily as some farmers have seed in the bin up to three years before it was taken into the processor. Tough to get it dry so need to be able to aerate and or dry it. Have eaten processed hemp seed before.
