While there is no separate market for A2 milk in Canada at this time, I breed the cows that I want to keep heifers from for replacement in my herd to A2 bulls. Have been doing this for several years now. Who knows, someone could develop a market for A2 milk here and offer a premium, if it happens, I will be ready. 80% of Jersey cows will give A2 milk while only 20% of Holstein cows currently give milk that will pass the A2 requirement. This is probably why the uptake of A2 is so slow to happen, just not enough milk available to make it worth while for a processor
