It might be a good niche market but most people today are used to what they have eaten all of their lives, which is young age feed lot beef and pork. Absolutely nothing wrong with it but there is a big difference in taste between a 16-20 month old steer and a 4 year old steer, same with hogs. I grew up on meat that was ''aged on the hoof'' and I still like it. Right now I have a straight jersey steer over 3 years old who has always been on grass, weighs about 1200, I'm gonna feed him this fall for 100 days and put him in the freezer, got a 2 year old jersey cross coming up behind him for next year or after when we need meat again.
