I try and keep an eye out and I'll mow around them if I see them and then come back with a chain saw and level them out as close to the ground as I can. They'll stand out in a newly mowed field pretty easily with a clump of uncut grass around them. I also make sure when I cut saplings off that I cut flush to the ground and not at an angle of any kind to avoid creating a "spear".
If the stumps are rotted pretty well, I'll run over and let the brush hog chew them up. If I'm not sure about that, I'll raise the hog as I pass over.
