looks good Brent but 2 suggestions. Like others have said, make one bay full depth. You won't regret it. You could put a loft over part of it for storage. The other suggestion is a small addition of a room for an air compressor. It could be added on the back or an end of the shop. Anywhere to get the compressor out of the actual shop so you don't have to listen to it.
As far as steel buildings....there are steel buildings that will handle the same wind and snow loads that the building you're talking about building. Perhaps the specific steel building you talked to them didn't meet their specs.
