Death wobble is possible on anything but with a 2006 Jeep GC WK, it is very unlikely to happen.
OP, which way was camber off? If sagging springs or sitting low, I would expect the camber to be a little positive (top of tire leaning out). Lifting the suspension would cause camber to go negative (top of tire leaning in). Worn struts can make rattle noises but I would make sure everything else is good too, like sway bar links etc.
