John in LA, what do you call the concoction in the bowl in the 3rd picture? I had some authentic gumbo the other day, and didn't like it- not much of a roux fan, I guess. I had always pictured it like that picture, with a red (tomato?) base. I'd like to find a recipe for whatever that is.
