Okay that information about it setting off an alarm should have been included in your OP. You need the find out if the sender to the gauge also sends a temp signal to the engine computer, which I’m just assuming it is new enough to have. So if it has a engine control module (I’ll use ECM to simplify) is the temp it is being provided the same as your shown by your meat thermometer, providing it can be read with a scan tool or laptop? If not then more diagnoses is required. If there is no ECM, then I would do as others suggested just install a manual capillary style gauge and see what happens. For a few bucks more you can get a Murphy gauge that can turn on a light or alarm at a set point adjustable with a small Allen wrench. See the link for an example, just one of the first to pop up on Google it only has a 6ft tube and I have no idea about the credibility of the seller. If you go that route you may want to look for a lighted one.
