Sorry to be the one to say this but I think you need more time to enjoy the drive and see the sights. Maybe go at another time of year when you can allow at least 10-14 days of relaxed driving. Looks to be about 1300 miles to closest mountains, with about 450 miles of driving/day if you allow 3 days there and a little more time for return trip. The trip you have planned will be very rushed and won't allow for a lot of sightseeing.
