SE corn has been around since the 50s and many varieties stay sweet long after picking. SU corn not so much. Just depends on what you choose to grow.

I like white corn and grow Silver King (SE) and Siver Queen (SU). Both kind of look and taste the same, but the King tastes good for a week after picking. Not Queen.

I don't bother with SH (super sweet) since it cross-pollinates too easy.
