I started to mention that but chose against it. While I always put crown up, I've seen "tests" that say it doesn't matter which way is better. Fact is, if you can keep the moisture out of the wood in the first place, then you shouldn't have a problem with the board cupping.
Wood is basically a sponge, though not as fast. It absorbs water even from the air. And once a board is dried, it can (and will) re-absorb moisture unless that is somehow prevented.
