Actually you developing a resistance to something like you say is not evolution. But if you develop that resistance and pass that on to your children it is the first small step in evolution as we know it today. Let's say that after 5 or 6 generations they are immune to poison ivy because you started to develop a resistance then that small part of evolution is complete. So with the weeds, if they develop a resistance and go to seed and next year that resistance is stronger to the same chemicals then it too is evolving. If say 4-5 years down the road that weed's offspring is totally immune to the active ingredients then it too has evolved.
