I like to use fairly small zuchinni... quarter them and cute into bite sized pieces.
Saute in a bit extra-virgin olive oil: Some sliced onion and diced sweet pepper... Then add a bit of crushed garlic clove and the zuchinni - saute until "just done". Season with salt and pepper (or use cayenne pepper if you like a little zip). Add a squeeze of fresh lemon juice over all. Top with a bit of freshly grated Parmesan cheese.
Great as a meal in itself... or served as side dish to grilled steak, chicken, fish or chops.
