All I do is use a scrub brush with dish soap and water. Do it before and after I use it. Use the garden hose to rinse it off. Leave it out in the sun for a few hours to dry. I don't think you want to try and seal the wood. I don't think sealant are food grade and it would come off into the juice. I store my press in the basement and run a dehumidifier all summer. One summer my dehumidifier stopped working and the wood got some mold growth on it. I just washed it off. I tried storing the press in my shed and there was enough moisture in the summer to start mold growth on the wood.
I just did 15 gallons of apple juice yesterday. I have a grinder to chop up the apples. You can't press apples without chopping them up first. I can about half the juice and make hard cider out of the other half.
