I would not have the wagon in a close steel shed. You need fresh air for the fan to pull through the grain. I also usually do not shut any aeration fans off until the grain is at the moisture level I want it at. IF there is a moisture front moving up through the grain and you stop the air the grain my spoil right at the front.
As far as adding moisture to the grain. That is actually HARD to do. I have dried grain too much and ran the fans during rains an other high humidity times. Very little moisture was added. I think you just finally got a good sample. The grain might have been wetter when you started harvesting and that would have ended up on the bottom of the wagon.
