I'm going to comment in spite of the fact I don't have a 855 NH baler which makes my comment suspect.
From your post I assume he is wanting to stack the bales round side down. That's ok but I have stacked bales one bale flat side down, and another round side down on top of the first ones. Don't remember if I then stacked a third one in the valley between the first two stacked round side down. Great care should be used in stacking round bales high as having them roll back is dangerous.
All right, you want to reduce the diameter of the bale. You should be able to stop the baler at any point in the baling process and wrap then, other wise, what do you do at the end of the field when there is not enough hay to make a complete bale? As I said I don't have a similar baler so expert advice from someone who does would be better.
