Met a guy a few years back from Alaska who made birch syrup. His was a bit less sweet than maple, but very much the same in flavor. Color was a touch darker than fancy maple but still fairly light. No sign of fruity flavor, but then again I wasn't really looking for it. I'd imagine it's much like maple syrup--lots of things (soil type, time of season, method of production etc. etc.) can affect the end product. Haven't had walnut syrup, though I've seen references to it, just not locally.
