Long ago when I had the time and opportunity to do a good amount of fishing, I always kept, cooked and ate smallmouth bass. Most any game fish is good to eat. Some better than others. Trout tends to be a bit oily. Perch is one of the sweetest. Bluegills are tasty but boney. Black bass (large and small mouth) tend to get a bit "muddy" tasting as they get much over about 16 inches - at least where I was catching them.
