I was born and raised 50 miles from the coast. If you go down around Corpus Christi the weather is better and the water much clearer than up around Galveston. Additionally the barrier islands are about 10 miles off shore down that way and offer excellent fishing on the lee side. Additionally, the summer breeze is predominately from the south which means you travel in a N-S direction out to the fishing grounds and back. Check out the locals to see what kind of boat works best.
Mornings are tranquil. Early afternoons usually contain at least one squall somewhere in your vicinity which is a 5 minute hurricane of sorts; high wind, heavy rain, and some lightening. 5 minutes later all is tranquil. Additionally, squall or not, in the afternoons the wind picks up and 15 mph is probably about the norm.
My granddad had a house in Rockport (about 30 mi. NE of Corpus) which was just right. Today it's a lot larger and has more amenities but still a great place to think about. Seldom do you get hurricanes that directly impact the area but you have to understand that hurricanes are part of living on the Gulf Coast.
Take a trip and check things out, talk to the locals, see what others are doing and get your ideas accordingly.
The humidity and mosquitoes are definitely there and you have to decide if you can tolerate that or not. I found the humidity to be less down there than around Galveston or farther East over in the Mississippi area where I spent several years. Mosquitoes can be avoided if you plan your activities.
