Eldon, that sounds a lot like what we in the South call "souse meat", which is made from hogs head and sometimes the feet and other parts. I didn't read the entire article, but according to Wikipedia, the recipe came from Europe. ( I guess it came with the immigrants) In the South it is often flavored with onion and/or other spices. I guess it all goes back to the saying, which is very true in many cases, that when butchering hogs, people "used everything but the stink".
