You must have the Houston Black Clay "gumbo" that I have here and had near Houston when a kid. Up here I don't usually get enough rain for it to go to the gumbo stage and live on a hill besides whereas down there everything was flat.
And on the word "Gumbo", one of my favorite foods with shrimp and Coonass sausage made and marketed for just such a purpose.
