Don't sweat it. It was a learning experience, and we've all been there. Sometimes, we even go there again. I rebuilt the head on one of my Farmall Hs a couple of years ago. Did everything according to the book. All new valves, guides, seats, springs, etc. This year it suddenly began missing and making strange noises. I dug into it, and found a sheared valve keeper, which let the valve drop down and bounce around on top of the piston. No real damage was done, except for my pride. I replaced that keeper, made all the adjustments, and now she's purring like a kitten again.
Whoever it was that removed your valve stem needs to be "educated".
