Sounds like you're on the right track to troubleshoot them. It must have something to do with a bad ground since 2 gauges are giving the same symptom. You've already proven the gauges are working and getting power with the previous tests.
When you ground the wires at the plug in front of the cab, what are you grounding to?
Try checking voltage between the known good ground under the dash, and the engine and the gas tank sender, see if there is a reading. Anything other than 0v indicates a bad ground.
