I'm in the food safety field and food illness can come from a lot of places. Species such as salmonella and listeria are found naturally and thus anything from the ground has the potential to have issues. That doesn't mean it does have issues - only the potential. Some of these species are more prevalent in things like beef and poultry products.If something becomes an issue there are several ways it could have happened - manure not spread properly, employee hand washing, antibiotics are making some of these species harder to get rid of, sick people, lack of proper sanitation - the list can go on and on. Lot of stuff coming from countries with less rules and education than we have on food handling. Some of the bad actors don't wash off of food easily. Something I will never eat is raw spinach. If its infected it will not wash off. Allergens are also part of the issue. I also think we've been protected so much that we are more susceptible.
