I have seen several places like that in New York while visiting there and your description and reasoning is what I had guessed was why they would be built that way. Manure gives off lots of heat as it breaks down. Would make sense to use it rather than waste it.
Also read where old timers would keep pigs in a stall in the barn and shovel the manure in there and the pigs would keep rooting through which eliminated the odor of the manure. I am sure that they had ways to keep the odor down and utilize the heat. Just because we do things differently today does not mean we do them better.
