We used to buy Hodgson Mills buckwheat pancake mix. It is real good high quality and they are located in Effingham, IL. We now buy flour at Strawberry Fields in Urbana, IL. It is a health food store. I use 1/2 cup buckwheat flour, 1 teaspoon baking soda, 1 egg, and 1/2+ cup of butter milk. It makes about 6 good sized pancakes and the butter milk makes them better that skim milk that I use. I used butter and real maple syrup from Funks Grove that has very old trees. It is located between Bloomington and McLean, IL on old route 66. I only do this when I wake up with real blood sugar or am scooping snow.
