Between my dad and I we have iron sights and scopes on all of our 30-06s. You are right, if the scope gets bumped or out of wack you can fall back on the iron sights.
Just teasing you a little here... shooting a deer with a 300 Win mag is like me squirrel hunting with my .06.
From what I read the 300 is a great round. Most of our shots here are 100 yards or less. We hunt heavy brush and swamps. I did nail a coyote last year at 300 yards though.
This year I switched to a 7mm-08. I have been having a problem with my retina and my doctor strongly suggested less recoil. Got an 8 point. No iron sights either, errr.
