The best thing about this recipe is that there is no recipe. There are a 1000 ways to make this soup, some wonderful, some just so-so.
Start with a chopped onion. Saute� in oil in the bottom of a big pot, then brown a chopped up piece of quality beef ( the better the better). Once that is done add the vegetables you like, a can of diced tomatoes and salt and pepper to taste.
Examples, Potatoes , chopped carrots, celery, and frozen mixed vegetables,
Cook on medium heat until the meat is tender and the veggies are done..
Add corn and it becomes Burgoo
Add beans and oregano ( and kale) and it becomes minestrone
Add a bay leaf to give it a unique taste
I think it is best after it sits in the frig for a day and the flavors blend.
