Just got a pailful of semi-wild Concords from a friend tonight--seems to be a good year for them here in NY at least. We just do "lazy man's" grape juice--wash your grapes a bit, stem them, then take a cup of grapes, put them in a quart canning jar with 1/3 cup sugar, fill with boiling water, shake a bit to dissolve the sugar, cap tightly and let set. You can also process for 10 minutes but we usually get a seal just by using boiling water and sealing quickly. Good within a few days, and improves a bit with age, though it's non-alcoholic. Got this recipe from some old folks who did many quarts of it every year and drank it with many of their meals plus served it to guests, and it's quick, simple and excellent.
