I'm selling mine at $500 a quarter, I pay the processing. Figure the steer weighs 1200 at $1.25 minus the $400 processing and I'm right at market. Thing to remember is this: try to buy the equivalent amount and cuts from a meat counter and my $500 a quarter blows the doors off of them. Heck rib eyes are $7/lb here, roasts right at or over $4/lb. Even 85% burger is running close to or over $3. $500 a quarter at 125 lbs is $4/lb, and I bet this steer cuts more than 125 finished a quarter. Trick is, finding $500 at once in the budget to spend.
