You have an internal leak in the system, most likely in the valve assembly as Tx Jim posted.
As the system leaks you have to continually turn the steering wheel a little bit to keep the tractor going straight ahead. One the steering valve reaches the end of its travel it re-centers itself which causes the wheels to make the sharp turn. If you use the tractor where you are making a lot of sharp turns the steering valve will keep centering itself when ever it reaches the end of its travel and you may not notice it happening.
