Feel is the first test. The ear (still on the stalk) should feel filled and firm all the way to within an inch or 1.5" from the tassels. Picking it young is not a problem as the ear will have some kernel filling a week before it is ready. Young kernels are just fine. There is no real hope for old corn. Fine for pigs or goats. Strip down an ear that feels 3/4 full and see what is there. Then you will be aware of what is to come. When you snap that first ear off the stalk, Shuck it and eat into it before it knows it is picked. You will be delighted. No butter or salt needed. My wager is you will eat it clean right there. Jim
