You will find that most value added products do not "fit" small farms. You will have a lot of product fora short while. The big buyers do not want a one shot deal. They want a steady supply for a longer period.
Also the records and other stuff make food produce tough if you get bigger than the local farmer's market type of stuff. Farmer's market exempt any bigger your not.
There are some organic marketing groups that work. This is how much of the Amish grow stuff is sold if not a road side stands. They grow the produce under contract for that marketing group.
Organic Valley in WI is kind of this kind of group.
You did not say where you are located. If there are any urban areas with in close driving distance you maybe able to contract with some one that is running a road side stand/store. They may not be able to produce enough of some things you maybe able to grow.
