Since this is to be a child's toy, why not make the conveyor apron out of a long, wide loop of heavy canvas. Run it over a front idler shaft (large wooden dowel), with allowances for adjusting the tension on the canvas apron. At the back, run it over the driven shaft (another large wooden dowel).
