Where are you starting from in Tennessee? Most of Iowa is going to be well out of the way anywhere you start from, but Mount Pleasant only adds about 90 miles, if you're not too averse to not running the interstates. From Nashville, Yahoo maps says to go to take I-29 out of Kansas City and then Nebraska route 2 to Lincoln. Don't be afraid of state routes out here, most 2-lane highways have a 60 or 65 MPH speed limit.
Wheat harvest is well up into the Dakota's by now. Corn and beans are way behind up this way due to cool weather, but it's got plenty of moisture when it does warm up!
There's all kinds of little museums out this way to see. In Nebraska there's the homestead museum in Beatrice, military vehicle museum in Lexington, tourist trap (Great River Road Archway) over the highway in Kearney, original Pony Express station in Gothenburg, Traveler's Rest, Lincoln County Historical Museum, Cody Trading Post (tourist trap), and Bailey Yards in North Platte, Pioneer Village in Minden, Stuhr museum of the prairie pioneer in Grand Island.
You don't see much of Nebraska from our only interstate.
