if they have sprouted already, they will grow. you can cut them or not, just be sure each piece has at least one eye. 2 oz is the "ideal" size for each piece.
are they from the supermarket? "table stock" has much looser standards in terms of diseases than "certified" seed. so you *may* be introducing diseases right from the start. that being said, if this is just a garden under the window sill, so to speak, don't worry too much since your livelihood doesn't depend on it. just don't plant anything that shows any sign of rot or disease. if disease shows up later (particularly Late Blight) you might consider killing them early to prevent spread to the neighbors (or even neighboring states!)
