There are a lot of small jobs a guy could do for others that wouldn't require all the worry and frenzy about lawyers and insurance and such. Digging out rocks and stumps, maybe a culvert across a road. Set your self a maximum digging depth - maybe like 18" or so and it's unlikely you would run into trouble with buried lines.
