You want a camera that 1) has infrared 2) has a quick trigger speed. If it doesn't have a quick trigger speed, you will only see landscape. Typically the more expensive ones do a better job at this. The Moultrie cameras are slow and very often don't even trigger when an animal crosses its path (I have one and have watched it).
The cuddyback cameras are the best ones I have used, but it has been 3-4 years since I looked at them. The technology may have gotten better on all them.
