Its really not terribly important how much you use or even if you use it. Other factors are way, way more important than bonding agents. If you use it, put it in the mortar mix as well as on the joint you are going to fill. You want the joint damp, not wet or dry. It usually takes several applications on the joints because they soak it up so much. Just keep going over them untill they stop sucking up the bonding agent (or water, if you are using that). Quikrete is not all that great of a mason mix, in fact its a pretty poor one. You are much better off stopping at your local brick yard and getting a couple sacks of what the pros use. Its only a couple dollars more and its less convenient to get but you will get a much better product.
Like I said earlier, other things are way more important than bonding agent like making sure the old mortar is properly removed, the joint is damp, the new mortar is properly placed, the mortar not drying too quickly causing cracks and proper tooling.
