I just trim off part of the stem end then cook it until it is fork tender... just done, not overdone. But I never pay attention to the time it takes.
Then I drain it and chop in in chunks, throw it in with some homecanned diced tomatoes and a whole lot of diced onions... a little salt, a little black pepper and a touch of cayenne pepper (or you can use Tabasco sauce or Louisiana hot sauce). Cook it a bit more to reduce the liquid from the tomatoes. Good stuff!
