Looks delicious! We boil it for 3 minutes too. A guy at a corn stand shared this method with me a few years ago. It is the best-ever cooking method and really retains the sweetness of the corn. Stays so sweet that we don't even add butter or salt anymore.
My mom always used to put the corn into boiling water, then bring it back to a boil and then boil it for an additional 10 minutes... way over cooked. Too hot to eat and tastes cob flavored when boiled too long.
