In alabama we do not disturbe the tops at all, just let them die naturally. We do pull the soil away from the bulb exposing approx. 2/3 of the bulb. The enables the bulb to grow larger and more importantly; the vidalia converts sunlight to sugar to give it that mild flavor. When the tops dry back simply pull the onions and lay them back in the row for a couple dry days then they will store better. True vidalias are grown only in vidalia, ga. due to the nature of the soil.
