Good idea but wouldn't work around here. Lots of folks over the years have tried to go big time in the potato (and several other forms of produce) buisness around here. We even had a chip factory next county over for a short while. Ask'n any one who ever tried to go big around here and you'll get some thing along the lines of a sholder shrug and a "heck if I know." They all lost their rears and ended up buy'n feeder pigs because no one could ever grow potatoes that met market standards on a big scale. Kinda like some one in Idaho ask'n around the local coffee shop look'n for advice on how to grow tobacco.
Round here you just have to do what Granddad did or try what ever you think will work. Only vegetable folks around here have ever been able to grow year in and out on a large scale is tobacco. :)
