Needs to be MPEG-2 so any player can play it. You also have to make sure it's burnt to the disk in "closed session" mode.
New versions of software i.e. Nero are dumbed down and probably won't mention anything about "open" or "closed" session. It will probably just say something like "burn disk to work on standard DVD players."
The choice of +R or -R makes absolutely no difference on any DVD player that's not ancient. DVD-DL (double layer) almost the same but some cheap players even made a year ago won't work with double-layer disks. I've burned over 1000 movies in all three formats and have yet to come across a player they wouldn't work in. That being said - the "DL" disks are the newest of the bunch.
If you are recording from factory made VHS tapes - you might run into encryption problems. Many DVD recording programs will not let you burn anything that's encrypted.
If you get stuck with any sort of encryption - do yourself a favor and subscribe to DVD Fab. Amazing program that comes out of China. I bought a lifetime subscription for $50 around 5 years ago. So far, they've sent me over a dozen updates for free.
