Disagree about the *best* flavor coming from fat. The best beefy flavor comes with age. Best tasting beef I've ever had was from a 30+ month old cow. Marbling makes it tender, but the flavor you get from fat is well... fatty! Go to some steak house chain and eat their greasy sirloin covered with butter. Three hours later there's still fat stuck to your teeth and tongue. Good beef has less fat, has what chefs call a "quick finish", meaning the taste doesn't stick to your palate like glue.
Good beef flavor doesn't require heavy marbling, the leaner cuts often have more *beef* flavor. The silliest thing I see is people grinding up the tender cuts for burger - the best cuts for burger are the ones that have the flavor, doesn't matter how tender they are, the grind takes care of that!
