Our potatoes are dug in the am and left in the sun until afternoon.Skins toughen when dry.Leave the dirt alone.Our cellar holds at 40 degrees.most of the crop is stored in metal trash cans and plastic pails.Potatoes need damp storage.Covered cans and pails keep critters and light out.Onions go upstairs in an unheated bed room spread on news paper.been growing potatoes for 65 years.You should know how to do it right.I can make a good meal with a few boiled potatoes,a bit of salt, butter.If you dont have butter mayo or Ranch dressing or a little olive oil and garlic powder works.Cook them in a covered pot on a wood fired cook stove.
