Around here a field like that will typically only have one cutting of poor quality grassy "horse hay". If that's your case you could do your hay, let it recover a bit then burn it down, and reseed it. Then you should have a nice alfalfa (or whatever you want to seed) stand for the next year. Soil test early and find out whether you need to add lime or fertility.
