When my niece was small, we used to gather at my grandmother's for Sunday dinner...and Mamaw usually prepared a roast, potatoes, and carrots. Of course, the potatoes got fished out and used to make mashed taters, the broth was used to make gravy, and the carrots were served in their own separate dish.
At Mamaw's funeral last week, my niece, who's now 35, had to mention that "Mamaw made the best "burnt carrots" in the world--they looked burnt, but they tasted wonderful!"
Mamaw was 100 when she passed away on New Year's Day...and we're gonna miss her "burnt carrots."
