Yes, I agree, moisture will probably be a problem. I have small hopper bottomed bins for feed storage. In the bin where feed doesn't move through too quickly, the condensation makes the feed stick to the sides and eventually mold to some degree.
If you are sticking sacks in the frezer, they might be a barrier between moisture and feed to some degree.
I would give it a try and see how it goes. You can monitor the situation and determine if it is long term feasible.
