It has been a long time since I looked at a Wien bridge circuit, if memory serves me correctly, the pot would be for a symmetry adjustment of the waveform.
Fixed resistors come in limited values so the purpose of the pot is to be able to tune to a resistance value that you probably wouldn�t be able to find in a standard value fixed resistor.
just tune the circuit put a dot of finger nail polish on the adjustment screw or shaft to the body to lock it tight and forget it.
